About Me

I am a teaching professor and researcher specializing in body composition, mood, and blood nutrient value changes using various nutrients/components and foods at Cal Poly Pomona University.

I have over 14 years of experience designing experimental studies, mostly clinical trials with both graduate and undergraduate students. The studies involve body composition, mood, and blood nutrient value changes utilizing the ingestion of various nutrients/components and foods (especially n-3 fatty acids).

Several students, Dr. Erik Froyen and I have just finished the California Table Grape Study (double-blind placebo-controlled randomized cross-over clinical trial), and the Mango Study (randomized cross-over clinical trial).  Both studies looked at the effects of grapes or mangoes on cardiovascular risk factors. Three MS students will use aspects of these clinical trials for their theses, and one undergraduate used the results for a presentation at The Cal Poly Pomona Student Research, Scholarship & Creative Activities Conference in March 2024.

I perform community nutrition research with students for community nutrition interventions, mentoring programs, and student success improvement, and worked with disadvantaged, diverse populations and students. I have published with colleagues from Loma Linda University, Cornell University, University of California Davis, and California Polytechnic State University San Luis Obispo. I am also a teaching Professor of research, nutritional metabolism, vegetarian nutrition, and Nutrition through the lifecycle, and have taught Nutrition graduate classes in the DBH CoAg MS in Agriculture for 16 years.

Presently, I am serving as a co-guest editor of “Evidence-Based Nutritional Intervention to Enhance the Health and Well-Being of Indigenous and Multi-ethnic Populations." You are welcome to submit a paper to this Special Issue
