Art History Professor Alison Pearlman, author of “May We Suggest: Restaurant Menus and the Art of Persuasion,” is interviewed about the psychology of menu design, current menu design trends and what they say about how we eat today. “The biggest thing I’ve noticed lately on menus would be the proliferation of new menu categories that draw attention to items on the menu, that create more opportunities for profit and kind of also cultivate a brand personality...of intimacy with the guests, of creating a culture.”
